Strawberry Pinch Cookies

The Holiday Season is in full bloom and the mornings and evenings are cold so I love a delicious treat when I come home.  These Strawberry Pinch Cookies are delicious and so easy to make as well.  Just look at how beautiful they are and they’re even kid friendly.  So the next party you’re hosting be sure to whip up a delicious batch of Strawberry Pinch Cookies.  Yummy.

Ingredients
  • 8 oz softened Cream Cheese
  • 1 cup softened Butter
  • ¼ cup Sugar
  • 2½ cup Flour
  • 1 cup Strawberry Jam or Preserves
  • Powdered Sugar (for dusting)
Instructions
  1. Preheat oven to 350.
  2. Line baking sheet with parchment paper.
  3. Cream together cream cheese, butter and sugar until fluffy and blended.
  4. Gradually beat in flour until crumbly dough forms.
  5. Form into a ball and transfer to floured work surface.
  6. Roll out to about ⅛" thickness.
  7. Cut into 2" squares.
  8. Place about ⅓ teasponn of jam in middle of each square.
  9. Pull up two diagonal corners or each square and pinch together in the middle.
  10. Tranfer to prepared sheet leaving about an inch in between each.
  11. Bake for 12-14 minutes or until lightly browned.
  12. Leave on cookie sheet for 5 minutes before moving to wire rack to cool.
  13. Dust with powdered sugar.

  1. I made these cookies today for a Christmas cookie exchange and they were a hit!!! So easy to make too! I used my homemade strawberry jam that I had in the freezer. My only advice is to make sure to pinch them very well. My first batch unfolded in the oven and half of them ended up as flat squares again. My second batch I pinched, folded the pinched part and pinched again and they came out perfect. Thanks for this recipe, it's definitely going to be a "go to" cookie recipe for me.
