Breakfast may essentially be my favorite meal of the day. One of my biggest cravings is definitely these Blueberry Pancake Muffins and I love that I can make them quickly and make in large batches. Since we’re a family of 6 now I always need to have breakfast on the table and I love to think ahead so I’m not scrambling in the early am to feed the kids before school. These Pancake Muffins are so easy to make, taste delicious and are a perfect treat for on the go!

Blueberry Pancake Muffins
Ingredients
- 1 C. flour
- 3 tbs. sugar
- 2 tsp. baking powder
- 1 C. milk
- 1 egg
- 2 tbs. vegetable oil
- 1 tsp. vanilla
- 1/2 C. fresh blueberries
Instructions
- Preheat the oven to 350 degrees.
- Line a 12 count muffin tin with liners. If you prefer to not use liners, spray the muffin wells with non-stick cooking spray.
- Combine the pancake ingredients mixing well.
- Fill each muffin well about 1/2 way with pancake batter (see photo).
- Add 4-5 fresh blueberries to each muffin (see photo).
- Bake 16-18 minutes. Insert a toothpick around 16 minutes and if it comes out clean the pancake muffins are done.
- Serve immediately with your favorite syrup or keep in an airtight container for grab and go breakfasts!
- *Makes approximately 12 muffins.
