Blueberry Pancake Muffins

Breakfast may essentially be my favorite meal of the day. One of my biggest cravings is definitely these Blueberry Pancake Muffins and I love that I can make them quickly and make in large batches. Since we’re a family of 6 now I always need to have breakfast on the table and I love to think ahead so I’m not scrambling in the early am to feed the kids before school. These Pancake Muffins are so easy to make, taste delicious and are a perfect treat for on the go!

Ingredients

  • 1 C. flour
  • 3 tbs. sugar
  • 2 tsp. baking powder
  • 1 C. milk
  • 1 egg
  • 2 tbs. vegetable oil
  • 1 tsp. vanilla
  • 1/2 C. fresh blueberries

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a 12 count muffin tin with liners. If you prefer to not use liners, spray the muffin wells with non-stick cooking spray.
  3. Combine the pancake ingredients mixing well.
  4. Fill each muffin well about 1/2 way with pancake batter (see photo).
  5. Add 4-5 fresh blueberries to each muffin (see photo).
  6. Bake 16-18 minutes. Insert a toothpick around 16 minutes and if it comes out clean the pancake muffins are done.
  7. Serve immediately with your favorite syrup or keep in an airtight container for grab and go breakfasts!
  8. *Makes approximately 12 muffins.

How delicious do these look? Make a few batches and place them in the freezer and thaw out for breakfast on the go.
