One of my biggest cravings is definitely shortbread cookies but I wanted to give a unique twist to the boring ol’ Shortbread cookies and share it with ya’ll. I have been so busy caring for my newborn son Landon I find myself not eating very much throughout the day but always reaching for something chocolately, it’s my weakness. I’m in love with the newest Chocolate Shortbread Cookies I whipped up over the weekend! Don’t they look absolutely delicious?

Chocolate Shortbread Cookies
Chocolate Shortbread Cookies
Ingredients
- 1-1/2 cups flour
- 3 tablespoons unsweetened cocoa powder
- 1-1/2 sticks butter, softened
- 6 tablespoons sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/3 cup mini chocolate chips
- powdered sugar
Instructions
- Preheat oven to 300 and grease a 9" tart pan, or square baking pan.
- In a bowl, combine flour, cocoa, butter, sugar, vanilla and salt and mix well with a spatula. Dough will be stiff. Keep combining until it all comes together and is no longer "dry" looking. Add chocolate chips and mix well.
- Spoon into prepared pan and press firmly and evenly with fingers.
- Bake for 60 minutes or until dry and set. Let cool for 10 minutes and then cut the shortbread with a sharp thin knife into wedges. Let cool completely and dust with powdered sugar before serving.
- Makes 12-16 wedges. I cut mine so I had 12
