Easy Cranberry Pie

Hello readers! Kristin from Marie Callender’s® here… I am excited to be writing for Brittany today! Let me tell you more about myself. I live in the great city of Chicago with my Bichon Frise, Joey. When I am not indulging in one of my many shows on Netflix or out with friends in the city, I am cooking or baking one of my recipes or something new from Pinterest.

I don’t know if it’s me or all the red Starbucks cups… but after Halloween, my mind changes gears and goes into “holiday mode.” And you know what the holidays mean: family, friends and (of course) food. Nothing gets me more excited for spending time with family than enjoying amazing food at the table. For this time of the year, I have a very easy cranberry pie recipe for you. I like to make two pies for Thanksgiving—can you believe it that some people don’t like pumpkin pie? Well, I’ve made cranberry pie in the past and my dinner guests loved it! Easy Cranberry Pie

Ingredients:

  • 1 dessert pie pastry shell
  • 1 1/3 cup sugar
  • ½ cup flour
  • 1 tbsp. grated orange zest
  • 1 pinch ground cinnamon
  • 1 pinch ground nutmeg
  • 3 eggs
  • ¼ butter, melted
  • ½ cup pecans or walnuts, chopped
  • 1 ¼ cups cranberries, rinsed and stems removed

Directions:

  • Preheat oven 325° F.
  • Place pastry shell in a 9-inch pie dish. Refrigerate until ready for use.

  • Mix sugar, flour, orange zest and spices in a bowl. Beat eggs in a bowl and add to mixture. Stir in butter. Fold in chopped nuts and cranberries.

  1. Pour mixture into dessert pie pastry shell.
  2. Bake in the preheated oven for 35 minutes.
  3. Let pie cool before serving. Enjoy!

That’s it! This dessert pie satisfies my holiday season cravings. I recommend enjoying a slice with a cup of hot tea or coffee!
