Recipe type: Dinner
Serves: 10
Ingredients
  • 1 lb beef
  • 1 can crushed tomatoes
  • 2 tbsp minced onions
  • 1 cup Stella Romano Cheese Shredded
  • 1 cup Ricotta cheese
  • 1 cup Mozarella cheese
  • 1 Egg
  • salt
  • pepper
  • Uncooked lasagna noodles
  • olive oil
Instructions
  1. Preheat oven to 375 degrees. Grab a non-stick frying pan and drizzle about 1 tbsp of olive oil in the pan and swirl it around. Turn your stove up to high heat and add in your ground beef to the olive oil. Using a wooden spoon smash down the meat so it can cook easier. Once the meat starts to brown add in your minced onions and continue to stir the meat until it's fully browned from the inside to the outside. Remove from heat and drain the fat from the beef and place back on stove. Add in your crushed tomatoes and a little bit more olive oil and stir it all together. Place a lid on the beef mixture and turn the heat to low to allow it to stay heated while we prepare the rest of the dish.
  2. Grab a large pot and place water and salt and place on the stove over high heat. Once it starts to boil place in your uncooked lasagna noodles. Since I was making 10 roll ups I only cooked 10 lasagna noodles in the water. Once the noodles are cooked you can drain the water into the sink and immediately lay the noodles out individually on a line sheet of parchment paper. While the noodles are cooling down quickly whip up your cheese mixture. For the cheese mixture take a medium mixing bowl and add in your ricotta cheese, egg, salt, pepper, mozarella cheese and Stella Romano Cheese Shredded and mix well.
  3. Grab a spatula and scoop up a heaping amount of cheese mixture and lay it out flat on each lasagna noodle. On top of the cheese mixture you can add in a big spoonful of your beef mixture and spread it throughout the noodles. Roll up your noodles jellyroll style and place them in your non stick baking dish with the seam down. I was able to fit 10 rolled lasagna noodles into my 9" x 13" Pyrex baking dish. Once the noodles are in the baking pan pour on the remaining meat mixture and top off with your fresh mozzarella cheese and Stella Romano Cheese. Place a piece of foil over your lasagna rolls ups and place in the oven for 35 minutes. Remove from the oven and serve while warm. These individual Lasagna Roll Ups were a huge hit in my home and lasted a few days as well. Even the kids gobbled them up.

  1. I love lasagna roll ups. My sis used to make these for the holidays... I know, so non traditional. Found this recipe at the Simple Supper Tuesday Link Party. I am the hostesses of Tickle My Tastebuds and would love you to stop by and link up this recipe. Here is the link http://bit.ly/1HxuOMy Cheers, Lori
  2. These look amazing! And so much easier to get out of the pan than cutting and scooping and trying to get it to keep its shape.
