One of my all time favorite things to bake is bread. This past weekend I decided to whip up a delicious batch of Lemon Almond Poppyseed Bread and it smelt and tasted great. This bread will be the perfect addition to any lunch or dinner and perfect for a party dish. Best of all it’s great for the entire family and loved by kids. This is a bread you don’t want to miss baking up in your kitchen, I promise!
LEMON ALMOND POPPYSEED BREAD
Makes one 9×5 loaf
Prep Time: 10 Minutes | Bake Time: 55 minutes [Total: 1 hr 5 min]
Ingredients:
Bread
- 2 cups all purpose flour
- 3 TB poppy seeds
- 1 TB baking powder
- ½ tsp table salt
- 3 large eggs, lightly beaten
- 2/3 cup white sugar
- ½ cup olive or canola oil
- ½ cup vanilla yogurt
- ¼ cup milk
- 1 tsp vanilla extract
- 1 ½ tsp almond extract
- zest from one fresh lemon
- juice from one fresh lemon
Glaze:
- 1/3 cup white sugar
- 2 TB freshly squeezed lemon juice
- ¼ tsp vanilla extract
- ¼ tsp almond extract
Directions:
- Preheat oven to 350 degrees F with rack on lower middle position. Grease one standard size loaf pan and set aside.
- In a large bowl, combine flour, poppy seeds, baking powder, and salt. Whisk until incorporated.
- In a separate bowl, whisk together the eggs, sugar, oil, yogurt, milk and both extracts until well-incorporated.
- Add wet ingredients to the dry, folding together with spatula until just incorporated. Do not over mix.
- Pour batter into prepared loaf pan. Bake 55 minutes or until toothpick inserted in the center comes out clean.
- To prepare glaze, combine ingredients in a bowl and whisk together until combined.
- Brush glaze generously over warm bread top. Allow the bread to finish cooling on a wire rack.
