Pumpkin Pie Energy Bites

The days are still hot but the evenings are getting even colder and I absolutely love it. As I have mentioned several times, Fall is my favorite season and anything pumpkin is welcome in my home. These Pumpkin Pie Energy Bites are amazing, easy to make and are perfect for the busy individual on the go! Leave out the oats and these are Paleo diet friendly! Enjoy and be sure to make plenty to share with your friends and family!

PUMPKIN PIE ENERGY BITES

Yields: 10-15 balls

Prep Time: 15 Minutes | Chill Time: 30 Minutes

Ingredients:

  • 1 cup pitted dates
  • ½ cup pecans
  • 1/3 cup pumpkin puree
  • 2 tsp. vanilla
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ½ cup oats
  • ¼ tsp. ground cloves
  • Pinch of salt
  • Optional: ½ cup of oats

Directions:

  1. Place the dates into a small bowl and cover with water. Let soak for 10 minutes, then drain.
  2. Place the pecans into a food processor and pulse until finely ground. Add in the rest of the ingredients, including the soaked dates. Pulse until combined. Adjust the spices to taste. Place into the refrigerator for 30 minutes to chill.
  3. Use your hands to form the dough into small balls. Store in the refrigerator in an airtight container.

Note: This is a Paleo recipe if the oats are not used.
