As you all know I’m a busy mother of 3 little ones plus work full time outside of the home and than come home and work full time on the blog. I’m a meal planner and once a week I love to head to the grocery store and stock up on my foods for the week. I don’t know about you but in my area of California the prices on items have been rising like crazy and it was getting hard to shop for the items my family loved. It’s getting harder and harder to make dinners at home with the crazy rising prices so I was on the lookout for a better solution.
I was so excited when I found out we had a brand new Grocery Outlet Bargain Market opening up in my area. This line of grocery stores are the nation’s fastest growing, extreme value grocery retailer that sells all the name brand items you’re looking for. Some of the brand I noticed there that I know you’ll love are Kraft, Kellogg’s, Tide, Tyson, Amy’s Kitchen, Naked Juice, Capri Sun and lots more. Just imagine finding the brands you and your family love at a fraction of the price of other retailers. I had the unique opportunity to visit the Costa Mesa store before it was opened and was amazed by everything I saw. Aside from the Costa Mesa location, 11 more locations are opening in Westminster, Azusa, La Habra, Long Beach, Lakewood, Compton, Upland, Sun Valley, Ontario and Avocado Heights.
I was so inspired walking around the Costa Mesa sneak peek opening that I couldn’t wait to go shopping and purchased all the products for a delicious home cooked meal for my family. Once the Westminster store location opened on December 12th I headed over there and began my shopping. I decided I was going to whip up a delicious Rustic Pork Loin topped over potatoes, mushrooms, carrots and onions and paired with savory oven roasted Green Beans.
Rustic Pork Loin
Ingredients
- 5 lb. Pork Loin
- 1 bag White Potatoes
- 1 bag baby carrots
- 2 Medium Purple Onions
- 1 Glove Garlic
- 2 Packages sliced Mushrooms
- 2 Cans Chicken Broth
- 1 Packet Seasoning Rub
Instructions
- Preheat oven to 375 degrees.
- In a large roasting pan add thick cut potatoes, carrots, onions and mushrooms.
- Pour in your chicken broth to cover your vegetables.
- Add a few slices of garlic and place in bottom of roasting pan.
- Place your pork loin on a flat surface and cover the entire meat mixture with your dry rub seasoning.
- Place pork loin on top of the vegetables, fat side down.
- Place in oven for 30 minutes, uncovered.
- After 30 minutes, flip the pork loin over to fat side up.
- Cook until internal temperate of 165.
- Remove from oven and let rest for 15 minutes
- Enjoy while hot.
