Kid Friendly Chicken Sausage Pasta with Veggies

Trying to feed the family healthy food, on a budget, and in a hurry isn’t easy. This Chicken Sausage Pasta with Veggies is an easy recipe that will not make you sacrifice taste.

Chicken Sausage Pasta

Whole wheat pasta and vegetables make up the bulk of this dish keeping it filling, flavorful and healthy. Lighter chicken sausage is more of the co­star instead of a headliner, keeping it affordable. It can be on the table in less than 20 minutes, boom! This a recipe that meets all your criteria and you will want to put it in your weekly meal rotation. Luckily even the kids gobble up this dish so it has been a winner for us all the way around.

Chicken Sausage Pasta and Veggies Recipe

Ingredients:

  • 12 oz. package chicken sausage
  • 8­10 oz. whole wheat egg noodles
  • 6­8 small sweet peppers
  • 1⁄2 head broccoli
  • 1 carrot
  • 1 Tbsp. olive oil, divided in half (1 1⁄2 tsp.)
  • Grated Parmesan to season

Directions:

Cook pasta according to package directions, drain. Dice peppers and sausage into small bite sized pieces. Place half of the olive oil in a large saucepan over medium ­high heat. Once oil is hot add peppers and saute until they start to soften. Add broccoli, chicken sausage, garlic, seasonings, saute for 10­-12 minutes. Wash and peel all outer skin off carrots, then use peeler to shave entire carrot into pan, cook an additional 3- 5 minutes. Toss pasta and remaining oil into pan and stir to combine and to heat through. Remove from heat and top with a generous sprinkling of parmesan cheese to season. Serve with bread for a complete meal.

  1. Planning on making this soon, but thrown off on ingredients mentioned when preparing, but not listed in the ingredients section. You mention garlic, is this garlic powder or actual garlic and how much? Second, you mention "seasoning" is this something specific (besides salt & pepper mentioned)?
