Chocolate Shortbread Cookies

One of my biggest cravings is definitely shortbread cookies but I wanted to give a unique twist to the boring ol’ Shortbread cookies and share it with ya’ll.  I have been so busy caring for my newborn son Landon I find myself not eating very much throughout the day but always reaching for something chocolately, it’s my weakness.  I’m in love with the newest Chocolate Shortbread Cookies I whipped up over the weekend!  Don’t they look absolutely delicious?

  • 1-1/2 cups flour
  • 3 tablespoons unsweetened cocoa powder
  • 1-1/2 sticks butter, softened
  • 6 tablespoons sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips
  • powdered sugar


  1. Preheat oven to 300 and grease a 9" tart pan, or square baking pan.
  2. In a bowl, combine flour, cocoa, butter, sugar, vanilla and salt and mix well with a spatula. Dough will be stiff. Keep combining until it all comes together and is no longer "dry" looking. Add chocolate chips and mix well.
  3. Spoon into prepared pan and press firmly and evenly with fingers.
  4. Bake for 60 minutes or until dry and set. Let cool for 10 minutes and then cut the shortbread with a sharp thin knife into wedges. Let cool completely and dust with powdered sugar before serving.
  5. Makes 12-16 wedges. I cut mine so I had 12
