Mac and Cheese Muffins

Being a busy mom to 3 little ones and a wife as well as working full time outside of the house and running this blog you can only imagine how limited my time is.  I love quick and easy recipes that are of course kid friendly, best of all are the left overs.  These adorable Mac & Cheese Muffins are so easy to make and are definite crowd pleaser.  Whether you’re making them for lunch, dinner, birthday parties or holiday events they’re sure to be a hit wherever.  Enjoy!

Mac & Cheese Muffins Recipe

Serves: 10
  • 8 oz Elbow Macaroni
  • 8 oz Sharp Cheddar Cheese
  • 2 tsp Cornstarch
  • 1 cup Milk
  • 1 Egg
  • ½ cup Panko Breadcrumbs
  • 1 tbsp melted Butter
  1. Preheat oven to 400.
  2. Place liners in a muffin pan and spray with cookng spray.
  3. Cook the macaroni according to the package directions.
  4. Drain and return to the pan.
  5. Add the cheese and stir until melted.
  6. Whisk together the cornstarch, egg and milk, pour over the macaroni and mix.
  7. Fill each cup with macaroni mixture.
  8. Combine the butter and breadcrumbs and mix well.
  9. Divide crumb mixture evenly over each muffin cup.
  10. Bake for 20 minutes.
